Salad with smoked salmon and zucchini

Ensalada con salmón ahumado y calabacín

For today we were looking for a quick recipe with which open the food. A starter with an interesting mix of ingredients and an ideal temperate touch at this time of year. And it looks like we found it in this salad with smoked salmon and grilled zucchini.

Salads allow us to combine different green leaves, fruits and vegetables in one dish. Playing with different ingredients can be a lot of fun and if the result is good, very satisfying too. This salad, specifically, combines canons, arugula, smoked salmon, blueberries and zucchini.

The combination allows us to combine very different flavors and textures in one dish. And the grilled zucchini gives a warm touch to this starter that can also become a great light dinner. 15 minutes will be all the time that you will “steal” it on the table.


  • 2 handfuls of canons
  • 1 handful of arugula
  • 2 slices of smoked salmon
  • A handful of blueberries
  • 20 slices of finite zucchini
  • virgin olive oil eztra
  • Black pepper

Step by step

  • Place the canons and arugula in a salad bowl or bowl and season with a little olive oil. Mix so that the green leaves are soaked equally.
  • Add chopped salmon and blueberries.
  • Cook the zucchini on the grill. To do this, smear the iron with a few droplets of oil with a brush and place the zucchini slices on it. Sprinkle a little black pepper and cook until lightly browned. Then turn them around and cook on the other side.
  • Add half the zucchini into the salad and mix. To finish, decorate with the remaining slices.
  • Serve salad with salmon immediately.
